For our third experiment, Malt Master Brian Kinsman travelled to Canada to meet a renowned winemaker in Niagara. There he learned how the grapes had to be picked by moonlight at -10C to produce the intensely sweet Icewine. Upon his return to the Glenfiddich Distillery Brian started experimenting with several French oak Icewine casks from the Canadian winery, filling them with different Glenfiddich aged malts for up to six months. Only the rarer whiskies, those aged for 21 years, could cope with the extra Icewine intensity. The taste is a perfect combination of both pioneering liquids, the heightened candied sweets and oakiness of Glenfiddich are complemented by mouth-watering tropical fruit notes and a luscious sweetness from the unique Icewine cask finish. First released in October 2017, the long-awaited second batch is now available.

This exclusive Glenfiddich expression has been matured for 23 years in American and European oak casks and elegantly finished in rare French cuvée casks. The finest flavours from Scotland and France have been fused together through the art of experimentation, to redefine moments of celebration and create a new and extraordinary drinking experience.

This whisky is Dr Bill's attempt to bottle the magic of sunset, with its endless horizon of reds, oranges and purples. The Lasanta begins with their giraffe-high stills, which yield a deliciously delicate and fruity spirit. Next, they mature it in bourbon and sherry casks for 12 years, transforming it into a mouth-watering odyssey bursting with rich spiciness and sun-drenched sweetness. It radiates with raisins, honeycomb and chocolate-covered hazelnuts lightened by cinnamon breezes. Each time you watch the sunset, you see something different - this is how it is to drink Lasanta.

Sipping The Nectar d'Or is like sending your senses on holiday to a French pastry shop, where the air swirls with sweet scents, balanced by a soft drumbeat of spice. This whisky was born from the memory of entering a pastry shop for the very first time. It's about that first moment of finding your senses deliciously overwhelmed, breathing in the sweet scents and wishing you could take a bite of every creamy, flaky treat you see. In Nectar d'Or you can taste it all. To create it, Glenmorangie take the delicate, fruity spirit of their giraffe-high stills and age it in American oak bourbon casks along with casks that once held Sauternes sweet white wine. The outcome is like a silky dessert-filled daydream of white chocolate swirled with lemon cream, crème caramel, almond croissants... all balanced by a soft drumbeat of spice. Dr Bill, Glenmorangie's Director of Whisky Creation, was born with a taste for adventure. And with this single malt he sought to create a whisky as unpredictable as his travels. Quinta Ruban is a whisky journey into the wild - a dark and delectable forest where the wind whistles with gusts of peppermint and dark swirls of chocolate can happen at any moment. In their giraffe-high stills, it begins soft and fruity, then gets darker and deeper as they let it age for 14 years in bourbon casks and port casks from Portugal. The finished whisky is a thicket of voluptuous flavour combinations. Walnut and black pepper. Mandarin orange and melted marshmallow. Dark chocolate bar and peppermint. Like stepping into a chocolate-minty-orange unknown, the journey is as delicious as the destination.

The last hours of a perfect autumn day when the world looks like a golden dream filled with cookie-coloured leaves and butterscotch skies... What would that taste like? The answer is, this dazzling, luminous whisky - a rhapsody of warm tones like purple heather, leaves swirling in the wind and hues of lemon, copper and gold. To create it, Glenmorangie gather the silky, fruity spirit from their giraffe-high stills and let it steep in American oak casks. No less than 15 years later, they transfer a portion into Oloroso sherry casks for three more years. Once 18 years have passed, Glenmorangie reunite them to create its warm balance of sweet, floral lushness. As Dr Bill, Glenmorangie's freethinking Director of Whisky Creation, enjoyed a cup of his favourite Jamaican Blue Mountain coffee, the notion of Signet first came to him. At once his mind filled with spiralling mocha flavours that he could not forget. It would take him years to bring this unprecedented whisky to life. But in its tiramisu tones and melting chocolate, you can taste his most delicious imaginings. Signet begins with Glenmorangie's precious chocolate malt spirit, made just once a year in their giraffe-high stills. Its espresso-like intensity fills the Distillery with aromas more familiar in an Italian coffee bar. Over the years, they temper its power with rare and treasured casks. Bourbon for creaminess. Sherry for sweetness. The spice of virgin charred oak. All balanced by some of the oldest whisky they own. The result? A velvet explosion of flavour. Bursts of bitter mocha, sizzling spice and waves of dark chocolate, mellowed by smooth butterscotch. Whisky, as you have never tasted it before.

VIKING HONOUR reflects the unique culture of our remote island home here on Orkney. Part of Scotland yes, but originally belonging to a vast Viking kingdom.

This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There's a hint of freshly-baked sponge cake too, warm from the oven, and you'll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.
